  • Halved tom-tom tomatoes
  • Chopped red pepper
  • Fresh blueberries or blackberries
  • Finely chopped peaches
  • Chopped and seeded jalapeno
  • Cooked chickpeas
  • Toasted pecans, pumpkin seeds, walnuts and pistachio
  • Olive oil
  • Apple cider vinegar
  • Honey
  • Chili powder
  • Grated or minced garlic cloves
  • Lemon juice
  • Salt and pepper
  • Chopped and minced avocado
  • Crumbled goat cheese

Preparation:

  1. Take a large bowl and combine butter, lettuce, parsley, basil, thyme, grilled corn, tom-tom tomatoes, blackberries or blueberries, red pepper, chickpeas, jalapeno and peach.
  2. Take another bowl and mix olive oil, apple cider vinegar, chili powder, honey, garlic, salt, pepper and lemon juice. Whisk the mixture until all the ingredients combined.
  3. Pour the dressing over the salad and toss it well.
  4. Add goat cheese, avocado and toss again.

Ingredients:

The things required for this salad are:

  • Apple cider vinegar
  • Walnut oil or extra virgin olive oil
  • Dijon mustard
  • Chopped shallots
  • Sea salt
  • Sugar snap peas, cut in thin strips
  • Frozen peas
  • Fennel bulb, cut in thin strips
  • Freshly chopped tarragon
  • Freshly ground black pepper
  • Toasted walnuts

Preparation:

  1. Vinegar, mustard, shallots, salt and oil should be whisked together in a bowl.
  2. Add snap peas, fennel, peas and tarragon to the mixture.
  3. Toss the mixture so that the whole salad is seasoned properly.
  4. Garnish the salad with fennel frond. Sprinkle the toasted walnuts on the top.
  5. If it needs additional seasoning, then season it with salt and pepper.

Ingredients:

  • Olive oil
  • Sugar snap peas cut into thirds
  • Red bell peppers, cut in ½ inch pieces
  • Chopped shallots
  • Minced garlic cloves
  • Salt and pepper
  • Chopped and roasted cashews
  • Toasted sesame oil
  • Skinless and boneless chopped chicken breasts
  • Soy sauce that is low sodium
  • Chopped butter lettuce
  • Sliced green onions
  • Freshly chopped cilantro
  • Peeled and sliced mango
  • Powdered chili

Preparation:

  1. Heat a large skillet and add olive oil.
  2. Add peas, shallots, pepper, garlic and salt and pepper in the hot skillet and stir.
  3. Add the cashews and cook until the vegetables become soft.
  4. Once the vegetables are soft, place them in a bowl and set them aside.
  5. The chicken should be season with salt and pepper.
  6. Add olive oil and sesame oil in the skillet and then add chicken.
  7. Toss it for even seasoning and cook it until it gets brown on both sides.
  8. Add soy sauce and cook for at least another minute.
  9. Once cooked, add the chicken to the bowl of vegetables.

Ingredients:

  • Sliced watermelon
  • Olive oil
  • Salt
  • Pepper
  • Honey
  • Quartered grape tomatoes
  • Fresh mozzarella
  • Fresh basil leaves
  • Balsamic glaze

Preparation:

  1. The grill shouldpreheat to medium heat.
  2. Brush both sides of the watermelon with olive oil and season them with pepper and salt.
  3. Drizzle a little honey over the slices and place them on the grill. Grill each side for at least 2 minutes.
  4. Assemble the salad by placing the watermelon slices and covering them with tomatoes, mozzarella and some basil leaves.
  5. Season it with salt and pepper and drizzle some balsamic glaze and it is ready to serve
